Purple Potatoes

I am just so intrigued by the purple potatoes that I just wanted to share it with all of you.  From what I've read they grow just like any other potaotes and you can harvest them when they are any size from fingerling to baking potato size.  The thing that sets them apart from your average potato is their dark purple color, inside and out
 
 
even their eyes are purple!
 
I wonder if all of their foliage will be as purple as those sprouts.....
 
The reason they are purple is due to an antioxidant - anthocyanin.  It's the same stuff that is found in blueberries.  I've also heard that they tend to be dry and starchy and have a bit of a nutty flavor.  Guess I will know how good they are once I get to harvest them.  Only three or four months till then!  I think the hardest part will be getting past the dark color.  Other than that I am willing to bet they are as  tasty as any other potato I have grown.
